I don't really have a competition suggestion (since I don't really compete)
But I could suggest choosing a competition that only allows one competitor per farm to allow the maximum amount of chances, instead of having a lot from just a couple farms.
So that would include the following...
Endurance, Harness Racing, Saddleseat, Racing, Sprint Racing, Steeplechase and Western Pleasure

(I think those are the only ones)
If I had to choose, I'd say Endurance would be a good one for the pot and entry fee.
