Don't forget that varnish roan and the roan gene are two separate genes. One is varnish from Lp, also often referred to as varnish roan, and the other is the roan gene that offers white hairs to the coat.
As a further note, blankets appear to almost always come with snowflakes. We can breed blanket without snowflakes... I think ... but it's quite difficult separating them out.

This horse is a black varnish. That's why it's looking so weird. There's no roan from either parent to pass on. And the reason they're called 'blue' roans is because the white and black mixed hair offers a blue-hue, hence 'blue roan'. Though that really doesn't come out in the game. The varnish comes from 'Blondie' the mare, she will always throw her Lp around since she's a double or fewspot.
She might turn reddish and look a bit like a red dun before she fades completely to the varnishing of Lp.
