Looking for an opinion from the community.
I hadn't heard of black chestnuts until recently.

Your horse is a registered sable colt (Registered meaning it was born and identified as a colour and breed) and has matured into a black colt. However it remains a sable colt as that was the colour it was registered.
This is super common, a horse maturing completely different from how it was born. I personally know a chestnut foal that matured into grulla gelding. But as it was registered chestnut, that is the colour it remains named.

There is no such thing as "registered colour" on HWO, the colour description can be changed any time. And horses never change colours (except a few glitches here and there), but colours change appearance depending on horse's age. That colt was born black and remained black, that's just how black looks on foals.

I am speaking from irl experience, as this is a realistic game, I assumed it was a similar outcome. sorry for any confusion
