Is it possible to breed a Belgian with tiger eye and the glossy sheen? I would love to see examples of one

It is, but you'll need to use a turk for the sheen and an NAB for the tiger. And then just breed back to pure. Reminder: Tiger Eye is recessive, so you'll need to have two copies for the green to show. But once you have a herd with nothing but tiger, then you'll always have tiger unless you breed out to a non-tiger.
I do not have an example however.
Here is one on the market that has, at least, tiger eye.
